RECIPES: Beef and Steak-centric Dishes

    Recipes for dishes and meals that center around beef and steak that are aarin member approved.

    Tacos de Barbacoa (we usually make this for Sunday breakfast with the family)

    Ingredients:
    1 Beef Tongue
    4 lbs of cheek meat (beef)
    salt and pepper to taste
    Corn tortillas (fresh are better if you can get them were you live)
    Salsa (red or green depending on taste) recipe included
    cilantro
    onion
    2 cloves of garlic

    For Meat
    1. Season Meat to taste with salt and pepper
    2. Wrap meat in Foil
    3. Stick in Crock Pot over night for about 8 hours.
    First 3 hours on high, then turn crock pot to low for the remaining time
    (about 5 hours)
    Meat should pull apart easily.

    Salsa for tacos Ingredients
    3 regular tomatoes (for red salsa) or 5 tomatillos (little green tomatoes for green salsa)
    2 jalapenos (you can add more depending on how hot you like your salsa)

    1. Boil ingredients for about 10 minutes
    2. In blender add the tomatoes or tomatillos, cut off the stems and add the jalapenos
    3. Add 1/4 onion
    4. 2 cloves of garlic
    5. Salt to taste
    Blend until smooth

    Remove meat from crock pot, chop up and mix

    Finely chop cilantro and onions to top your tacos. (optional)

    Now you are ready to make your tacos. (Don't forget the tortillas have to be warm)


    ***Warning if you are making salsa it's recommended you have a blender just for salsa and spices, they tend to penetrate the blender.****

    A personal fave, even if I am considering going vegan.

    Macaroni, beef and Cheese (Not good with names.)

    Ingredients

    1 (16 ounce) bag of large elbow macaroni
    2 tablespoons vegetable oil
    2 cups chopped green bell peppers
    2 cups chopped onions
    1 tablespoon chopped garlic
    2 lbs lean ground beef
    3 cups canned crushed tomatoes
    salt and pepper
    dried basil
    ground cumin
    dried oregano

    Directions
    1) Heat the oven to 350 degrees.
    2) Cook the macaroni according to package directions; drain and set aside.
    3) Heat the oil in a skillet; add the peppers, onion, and garlic, and sauté until soft.
    4) Add the ground beef and sauté till browned.
    5) Add the tomatoes, salt and pepper to taste, and the basil, cumin and oregano.
    6) In a large bowl, combine the macaroni and the beef mixture.
    7) Spread this mixture into a 9X13-inch baking dish. Top with the cheese and bake for 20 to 25 minutes, or until the cheese is lightly browned and bubbly.

    Okay, first post in this group. Decided to join in with my all-time favorite recipe, since it's so easy to put away and reheat later (I sometimes don't find time to actually cook).

    Shepherd's Pie

    Ingredients:

    1 lb ground beef
    2 - 3 cups mashed potatoes (I like lots of mashed potatoes and the instant kind works)
    4 oz Philadelphia cream cheese (or any sort of creamy cheese really)
    1 cup shredded cheese (cheddar works best)
    2 cloves garlic, minced
    2 cups frozen mixed veggies (thawed)
    1 cup gravy

    Directions:
    1. Heat oven to 375 degrees.
    2. Brown the meat in a skillet, and drain.
    3. Mix the mashed potatoes, cream cheese, 1/2 cup of shredded cheese, and garlic until blended.
    4. Combine the meat, veggies, and gravy in a baking dish.
    5. Add the potato mixture to the baking dish, making a nice thick layer. Add the remaining shredded cheese on top.
    6. Bake for about 30 minutes, until heated through and the cheese is melted.
