Settings for Calibre

So I use Calibre to convert files to ePub for my e-reader (PRS-650)

I was wondering if anyone knows if there are any settings so that when I convert the xxx.pdf book to only get the xxx.ePub convert file and not the whole she-bang of metadata, covers, folders etc... just the plain old converted file
